What do we do during a global pandemic? Eat ice cream, and start selling it. The idea of offering indoor seating during these uncertain times seemed overwhelming, but somehow starting an ice cream shop in the space designated for seating didn’t bring on those same feelings. Instead, it offered us a new project and something fun to focus on, and a little bit of fun goes a long way these days.
It was as simple as Amy asking at a meeting, “Am I crazy for wanting to open an ice cream shop?” And so it began. We sourced Boulder Ice Cream (an all women-owned ice cream company!), bought a dip freezer, made hand-drawn signs and painted old window frames to hold those signs. We rearranged our backroom, put retail and coffee on the shelves, strung lights across the ceiling, and turned on the open sign. We decided to offer scoops, ice cream sandwiches (now known as Cliff-wiches), and floats made with nitro coffee, kombucha, CBD soda, and the classic sodas.
The only thing we were lacking was a name, until the ice cream-loving dog laying under our meeting table caused a lightbulb to go off. Clifford, Amy’s dog who is also known as Cliff, has since become the furry face and star of Cliff’s Scoop Shop. Our ice cream is, of course, “Clifford approved.”
